* IBU 20
* ABV 7.7%
* OG 1.073
* FG 1.015
* EBC 24
* 10 litres into fermenter.

== Ingredients ==
=== Water ===
SES water acidified to hit 5.5 mash pH (ended up 5.76 for some reason)

* Sodium metabisulphite – pinch into brewing liquor and again for sparge
* Lactic acid, 4.4ml in the mash
* Lactic Acid, 1.7ml in the sparge

=== Malt ===
* Weyermann Eraclea Pilsner malt, 2.6kg - 3EBC
* Weyermann Barke Munich, 1.2kg – 20EBC
* Simpsons Vienna malt, 1.2kg – 7.5EBC
* Weyermann Caramunich , 100g – 100.5EBC

=== Hops ===
* Hallertauer Hersbrucker (1.6%AA) 25g @ 90min
* Saaz (3.5%aa) 10g @ 90min

=== Yeast ===
* German Bock (WLP833)

== Process ==
=== Mash ===
* Protein rest at 57C (ish) for 30 minutes.
* Single decoction pulled and boiled for 30mins.
* Returned decoction to raise mash to 66C for another 20mins

=== Boil ===
* 90 minute boil

=== Ferment ===
* 3 days at 12C, then 2C rise each day until finish of fermentation on day 7.

=== Serving ===
* Final beer carbonated to around 2.0 vols and lagered for 12 weeks ish.
