BJCP 2021 Style 8A Munich Dunkel
In my opinion, Munich Dunkel should be about Munich malt, and that's all there is in this. A restrained amount of hops, and a decoction mash to lift the complexity and give a rich dry finish.

- 34 litres at end of boil.
- 32 litres into fermenter.
Ingredients
Water
47l reverse osmosis water with 8g CaCl & 3ml 80% lactic acid
Malt
- Barke Munich, 7800g, 100%
Hops
- 45g Hallertauer Mittelfrueh (4.2% AA) 60 mins
- 22g Hallertauer Mittelfrueh (4.2% AA) 30 mins
Yeast
- Munich Helles (WLP860)
Process
Mash
- Mash in at 51°C
- Triple decoction with rests at 62°, 70° and 78°
Boil
- 60 minute boil
Ferment
- Added pure oxygen before pitching
- Pitch at 9°
- Allow to rise to 12° over 3 days
- Rise slowly to 18° after half attenuation
- Lager at ~1° for 2-4 months
Serving
Carbonate at 2.5 volumes
