BJCP 2021 Style 8A Munich Dunkel

In my opinion, Munich Dunkel should be about Munich malt, and that's all there is in this. A restrained amount of hops, and a decoction mash to lift the complexity and give a rich dry finish.

Statistics

  • IBU 21
  • ABV 6%
  • OG 1.063
  • FG 1.018
  • EBC 22.7
  • 34 litres at end of boil.
  • 32 litres into fermenter.

Ingredients

Water

47l reverse osmosis water with 8g CaCl & 3ml 80% lactic acid

Malt

  • Barke Munich, 7800g, 100%

Hops

  • 45g Hallertauer Mittelfrueh (4.2% AA) 60 mins
  • 22g Hallertauer Mittelfrueh (4.2% AA) 30 mins

Yeast

  • Munich Helles (WLP860)

Process

Mash

  • Mash in at 51°C
  • Triple decoction with rests at 62°, 70° and 78°

Boil

  • 60 minute boil

Ferment

  • Added pure oxygen before pitching
  • Pitch at 9°
  • Allow to rise to 12° over 3 days
  • Rise slowly to 18° after half attenuation
  • Lager at ~1° for 2-4 months

Serving

Carbonate at 2.5 volumes
